The Swiss Biotech Association seeks an Application Scientist in Gland to develop mycelium-based meat and dairy alternatives, supporting global bioprocessing facilities and collaborating with sales and R&D teams.
This position focuses on advancing the company's strategic goal of establishing a worldwide network of industrial-scale bioprocessing facilities. The scientist will work closely with the Commercial Director and CPO to drive the development of alternative protein businesses using mycelium-based ingredients.
Responsibilities
- Create and test various meat and dairy product concepts using fungal biomass and precision-fermented proteins like egg albumin, casein, and whey.
- Gain expertise in new product categories, including hybrid meats, protein fortification, and nutraceuticals related to gut health and GLP1.
- Advise the fermentation team on how process adjustments impact the physical, chemical, and microbial properties of mycoprotein and final products.
- Oversee the management and maintenance of the food development kitchen and analytical laboratory facilities.
- Present raw materials and product concepts to potential clients in Switzerland and internationally as needed.
- Verify that mycoprotein functionality aligns with customer specifications in end-use applications.
- Help resolve application issues by working directly with customers.
- Support the launch of new applications alongside sales and product development teams.
- Work with the commercial department to create product details, process flow diagrams, and pricing documents.
