HES-SO Valais-Wallis seeks a Postdoctoral Researcher to conduct applied research on non-Saccharomyces yeast metabolism in beer and wine, translating findings into industrial applications.

This position focuses on the respiratory metabolism and non-alcoholic fermentation processes of non-Saccharomyces yeasts. The researcher will bridge the gap between laboratory science and industrial practice by collaborating with partners in the brewing, wine, and biotechnology sectors to apply research outcomes.

Responsibilities

  • Perform applied studies on how non-Saccharomyces yeasts metabolize and function within beer and wine production.
  • Analyze the biochemical aspects of yeast respiratory metabolism and assess their impact on the sensory qualities of alcoholic beverages.
  • Design, refine, and scale biotechnological fermentation methods, moving from small laboratory setups to pilot and full industrial operations.
  • Work closely with industry stakeholders to ensure research outcomes are effectively implemented in commercial brewing, winemaking, and biotech contexts.

Requirements

  • A doctoral degree in (Food) Biotechnology, Bioprocess Engineering, or a related field specializing in non-alcoholic wine and beer production with an emphasis on non-Saccharomyces yeast.
  • Proven experience in both aerobic and anaerobic fermentation, bioprocess development, process scale-up, and fermentation engineering.
  • Practical proficiency in operating bioreactors ranging from 1-liter to 1000-liter capacities.
  • Fluent command of English.
  • B2 level proficiency in either French or German.
